I've seen numerous references to the fact that a spasm/twitch/involuntary muscle movement can occur in the recently dead (several hours is the figure I remember through a haze). Although the person is dead...the complete shutdown of the entire structure of the body takes a while. During that time, if the body develops a "short" you can get a eye to wink or a hand to clench or some other simple muscle movement. Although it never happened to Natalie, I remember an X-File where Scully was conducting an autopsy and the body winked at her. Although she understood the phenomenon and explained it to Mulder, it did shake her a bit. Can't say that I blame her.
