Good observation which begs the question why is Nick acting so different this time around? My opinion is that something happened to Nick to cause him to withdraw from his limited association with humanity. Timeline wise on the show when was the last time we see Nick before he turns up on Natalie's examination table. Was it his time in Vietnam with the Red Cross in 'Hunted', his work on the Senator's security detail in 'Beyond the Law', Nick's Greenwich Village address from 'Close Call' or maybe the Red Scare incident in Chicago from 'Spin Doctors'? There really wasn't anything unusual about his behavior towards humans in those examples. I'm pretty new here so while I've got no idea what the general fan consensus is on this matter I'm thinking that something traumatic enough to cause Nick to step back a bit must have occurred hence Nick's behavior in Natalie's office and later on in the street. Another reason for Nick's behavior could be that Nick's was trying to scare Natalie off and while the vampire he's presenting her isn't the real him in most cases it would be effective in scaring off humans.
